Walnut Cookies Recipe
Walnut Cookies:
- 2 ½ cups all-purpose flour
- ½ tsp. salt
- ¼ tsp baking soda
- ½ tsp. ground cinnamon
- ¼ tsp. ground ginger
- 1 ½ sticks unsalted butter
- 3 oz. cream cheese, softened
- ½ cup honey
- ½ cup packed brown sugar
- 1 large egg yolk
- 1 Tbsp. hazelnut or walnut liqeur
- Pam to spray mold

Walnut Filling:
- 1 ½ cups ground walnuts
- 1 cup confectioners sugar
- 2 Tbsp. butter, softened
- 2 Tbsp. strong coffee

1. Combine flour, salt, cinnamon and ginger with a whisk in a medium bowl, set aside. Combine butter, cream cheese, and sugars in separate bowl and beat on medium speed until fluffy. Beat in liqueur and yolk, then add flour mixture until just combined.

2. Divide dough in half and form into 2 disks, 1 inch thick. Wrap in plastic and refrigerate for 1 hour. Dough must be cold.

3. Spray Pam in mold. Place dough in mold firmly. Gently push edges inward a bit and using a wooden skewer, gently ease dough out of mold. Place shells on one cookie sheet 1" apart and nut meat on another cookie sheet. Freeze at least 1 hour.

4. Preheat oven to 325 degrees F. Bake shells approximately 10-12 minutes and nut meats 8-10 minutes. Let cool.

5. For the filling: Mix filling ingredients together well. Roll or scoop 1 tsp. of filling and place on flat side of cookie and press another cookie on top.
