Summer Berry Mini Trifles
Strawberries and blueberries and raspberries ... oh, my! Just as easy to prepare as they are pretty, these luscious desserts combine the heavenly sweetness of angel food cake, the tasty tang of berries, and the creamy richness of whipped cream into one amazing treat. Serve these little sweet treats at your next summer soiree.
- prepared vanilla icing with lemon extract
- 10 oz. whipping cream
- 1 angel food cake (cut into cubes)
- 3 cups strawberries (sliced)
- 1 pint blueberries
- 1 cup raspberries
In large bowl, prepare whipping cream. Place a layer of cake cubes on the bottom of serving glasses. Layer sliced strawberries and blueberries on top of cake cubes. Use a small decorator tip, cut disposable decorating bag and add whipped icing to pipe icing layer. Top with another layer of cake cubes. Layer with sliced strawberries and blueberries. Pipe another layer of icing and fill to top of glass. Top with raspberries.
