Can I substitute powder sugar for granular sugar?
Owner Response: Thanks for asking! No, powdered sugar is not recommended for this recipe as it will make the dough finer and you may have more spreading as the cookie bakes. I would keep to this recipe as is since it works so well. From the Fancy Flours staff

I just purchased the bear cookie cutter featured in your catalog. I have used many sugar cookie recipes before and this one looks wonderful. My question - when do I fold the arms of the bear in to make it appear to hold a candy. This was the way the cutter appeared in your catalog.
Owner Response: Marilyn, To create the folded arms on these "cuddle" style cookie cutters, fold dough over before baking. You can leave a larger space to place a candy or nut after baking by using a bit of frosting or corn syrup to secure the treat. Or you can use some of our sugar decorations specifically for baking with the cookie. These are indicated on the product description and in the catalog and won't melt while baking the cookie. Do you put the royal icing on before or after you make the cookies
Owner Response: Hello! We're glad you're asking the question that we're sure others have thought about but never asked. The royal icing goes on "after" you make the cookies. Make your cookies and let them cool, if you can, wait until the next day and put on your icing so you know for sure that your cookies are set and ready to go.

A Few Tips For Success

I am doing my Christmas baking now - in September.Sometimes I do it in Summer. I bake, decorate and freeze. No stress when the actual holiday rolls around. I have made maybe thousands of cookies using this recipe. Here are a few success tips. The key to this recipe is BUTTER. Butter gets soft.This dough is soft dough. Always use silpat mats. If your cutters are the regular kind, flour the mat like crazy. If you are using Hammer Songs or other complicated cutters, do not flour. Roll out the dough, using a sheet of waxed paper. Every time you roll, lift the paper and put it back down. By now the dough is pretty soft. Place the mat on the cookie sheet and put it in the fridge. When cool, cut out your shapes firmly.. If you try to remove the scraps at this point, you'll get a ragged mess, with the dough breaking apart. Put the cookie sheet in the freezer. When frozen, the scraps come up almost in a single piece, very neat, no ragged edges. Finally, if you plan to decorate these cookies with royal icing, do this. When you put your just-baked cookies on the cooling rack, cover them immediately with paper towels, one or two layers. Then cover the whole thing with a heavy bath towel, This places weight on the cookies without breaking them. All that fat, that butter, which rises to the top, will be absorbed by the paper. I repeat this step, because I have had to throw out dozens of decorated cookies due to blotching. This method avoids that problem completely. Good luck.

I was hesitant to try a new sugar cookie recipe over my old "stand by" But, this is truly the Best Ever recipe for delicious sugar cookies. Easy to make and fun to decorate no matter which holiday. Rolling the dough between sheets of parchment paper is a marvelous idea AND, the cookies do not spread!! Thank you for sharing the wonderful recipe.

Absolutely LOVE this recipe. I've tried many over the years and have an old standby (29yrs) that I've used til now. Thus recipe is excellent and doesn't require chilling. I roll my cookies in a mix of powdered sugar and flour. Every Christmas I make approximately 500 rolled and cut cookies and know my dough ;-). My question is what are the nutritional values?

If I only have salted butter, can I use that and eliminate the 1 tsp. of salt from the recipe?
Owner Response: Hello, Ashley. Thank you for reaching out. You can do this but may find it not salty enough with just the butter. Which could just mean a bit of trial and error. Hi, First let me say I love your catalog and all the wonderful products you sell. Now about these NFSC. I have had this recipe for awhile. I have a Eat Me cookie stamp for a Alice in Wonderland tea with the granddaughters . I need to make a cookie where the impression won't bake out. I thought 3 tsp of baking powder seems like a lot and it would puff up and loose the impressions. I noticed on the original recipe on another site they changed the amount of baking powder to 1/2 tsp. which would be right? Sorry for making this so long, but I need to know before making these.Thank you, Jeanette P.S. I see that this has great reviews on a lot of sites
Owner Response: Hello Jeanette, thank you for your feedback and kind words! For this recipe, the 3 tsp. amount of baking powder is accurate. A trick to make sure the cookies don't puff up while baking is to be sure your cookie sheet and the dough itself are thoroughly chilled before going into the oven. And a trick for using cookie stamps, to avoid the impressions baking out, is to cut out the basic cookie shape in the size you want and bake it. Then, as soon as it comes out of the oven and is still warm, press the stamp into it. Hopefully this helps you and your granddaughters have many fun tea parties. Happy Baking!

This is my all time favorite sugar cookie recipe. It holds the shape and makes a good amount. East to work with and roll out. My daughter requests them every year for her birthday instead of cake. I make them often enough that I keep the recipe posted on the inside of my baking cabinet door. My next project will be to make the chocolate ones for Halloween, .
