Gingerbread Cookie Recipe
This is the best gingerbread cookie recipe we have ever tasted! Makes approximately 6 dozen 3 wonderfully crisp cookies.

- 2 sticks unsalted butter (room temperature)
- 2 cups sugar
- 1 cup light molasses
- 2 eggs
- 4 cups flour
- 2 tsp. salt
- 2 tsp. soda
- 2 tsp. cinnamon
- 2 tsp. ginger (ground)
- 2 tsp. cloves (ground)

1. Cream butter and sugar. Add salt, soda and spices. Add eggs and molasses. Add flour. The dough will be very soft and must be well chilled before handling.

2 Preheat oven to 350°F. Roll dough out on a heavily floured surface. Dough must be rolled very thin (1/8") in order to keep the shape of the cookie cutter.

3. Decorate and bake for 8-10 minutes.

Received the recipe card with some cookie cutters and decided to try after having gingerbread cookies in Disneyland. These are so good, sweet with a little kick from the spices and very easy to make. They are good on their own, with cocoa and especially with pumpkin ice cream. Thank you without that recipe card probably would never have made them.
