Perfect For Complicated, Delicate Shapes

I use this dough for very complicated cookie shapes. Also for long, thin shapes that might break under the weight of royal icing decoration, such as the runner on Hammer Song's Sledder and Dog cookie. This is a very strong dough, also delicious, and easy to whip up in quantity. When adding the dry ingredients, really get in there with your hands. Much easier. Cool the dough and then Roll it out on a Silpat mat, using wax paper. Cut your shapes, then refrigerate. When cold, the scraps pull off very easily, almost in one piece.
