Chai Spice Cake with Nutmeg Glaze

Ingredients:
Cake:
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- dash ground clove
- dash ground pepper
- dash salt
- 1/2 cup milk
- 1/2 cup sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla
- 1 egg

Nutmeg glaze:
- 1/2 cup powdered sugar
- 2 tbsp melted butter
- 1-2 tbsp milk
- 1/4 tsp freshly grated nutmeg

Instructions:
Preheat oven to 350 degrees F. Prepare Autumn Delights pan with baking spray. Combine flour, baking powder, baking soda, spices and salt. Set aside. In a separate bowl, combine milk, sugar, oil and vanilla. Add one egg and mix thoroughly. Add dry ingredients and combine. Evenly spoon batter into pan. Tap gently on counter to remove air bubbles. Bake for 12-15 min or until toothpick inserted into one of the center cakes comes out clean. Let cakes cool for 10 minutes before inverting onto a cooling rack.

For glaze, combine powdered sugar and melted butter in a medium bowl. Add nutmeg and stir in milk to desired consistency. Pour over cooled cakes

These were nice little cakes. They aren't too sweet and the glaze gives them just the right amount of sweetness and spice. Because I made them with 1:1 gluten free flour (Bob's Redmill), next time I'll reduce the temperature to 325 and extend the cooking time by twice-ish. Doing so ought to prevent the crispy outside and somewhat underdone inside I got this time around after taking them out and putting them back in again to get them cooked all the way through. Other then that, my error, they were nicely flavored and I'm looking forward to making them again and sharing them. A great use of the thrift store Nordic Ware pan I picked up! Thanks

When I was making this the batter was really runny and didn't Look like a normal batter consistency. But while it was baking it fluffed up and became a fluffy cake! These are easy to make, very moist and delicious! The glaze is amazing to!
