This one is probably my go to winter holiday mold. I think it is my overall favourite one! The design is nice and deep, making for detail which doesn't go away when it is baked. I have found that leaving the cookies for at least 12 hours is essential to the success of springerle. The chocolate-orange springerle cookies I made using this mold were particularly elegant. I tweaked the recipe a bit and added orange oil and the finely grated orange peel and used extra-dark cocoa powder. You can find recipes for cookies using molds in just about any good cookie cookbook, and there are a plethora of recipes to be found online. The recipes in the booklet that come with the molds are great, but there are lots of other molded cookie recipes that work just as well.

The quality of this item is very nice; however, I ordered two for separate Christmas gifts and received only (1) instruction/recipe book. I was told by customer service that they send only per multiple order because they are in short hand. She said if she could find another she would send it, but I haven't received it yet (2 weeks). The booklet is critical because as it specifies, only certain recipes can be used with success. It's very much a critical part of this item. If you can't use it successfully, what good is it? Any way, I'm still waiting for the other booklet.
